Spice island
The gastronomic gamut in Singapore runs from haute cuisine to delicious Southeast Asian specialties hawked from tiny stalls. Great restaurants with atmosphere abound, but if it's an adventure you're after sample the savory native dishes that combine the best of Malay, Chinese and Indian cooking, the three cultures that make up Singapore's population.

Nonya or Peranakan food is the meeting of Chinese ingredients and Malaysian spices and is generally thought of as the "national cuisine." Coconut milk and chilies crop up in most of the dishes, with beef rendang (an Indonesian-style curry) being the most famous. For some of the best Nonya in town, try the Blue Ginger (97 Tanjong Pagar, 835-3928) nestled in a quaint shophouse. For a real local experience, head to a hawker center, where sleek-suited businesspeople slurp in harmony with a chorus of short-and-slipper-clad diners. Everything from healthy noodle soups to curries to steamed buns is served from individual stalls.
